Flaming Tequila Cheese-Chile Dip


Yeah, yeah, we know: There’s a big game coming up. To compete with the high-stakes drama of the Super Bowl, you’re going to need something more impressive than a bowl of guac. Enter queso flameado (flaming cheese).

A layer of cooked chorizo provides the snack’s foundation, green chiles bring the heat, and a generous blanket of melted cheese does what only melted cheese can do. The final step that takes this dip from good to great is the addition of a couple shots of tequila, poured over the molten queso. Just before serving, you set fire to the tequila (that’s the flameado part). When the blue flames burn out, the cheese is pocked with browned spots, and all eyes will have shifted from the game to the snack.—Jessica Battilana

Queso Flameado

  • 4 oz Cooked chorizo (optional)
  • 1 4-oz Can green chiles
  • 3 cups Grated Monterey Jack cheese
  • 2 oz Tequila

In an earthenware dish (or a cast-iron pan), layer the cooked chorizo, the drained chiles and the cheese. Pop into a hot oven until the cheese is just melted. Remove from oven, pour tequila over the top, use a lighter or match to set on fire. Let the flames subside, then serve with tortilla chips for dipping.
