Imagine a Mint Julep as a Jell-O Shot

We might not care all that much about the race itself, but Mint Juleps are a Derby Day tradition we can happily get behind. Instead of enjoying the cocktail in a silver cup over a mountain of crushed ice, it’s reinvented here as a gelatin shot. The amber-colored jigglers are plenty potent and, with the jewel-like raspberry trapped within, pretty to look at too.—Jessica Battilana

Mint Julep Jellies

Makes 10

  • 1 cup Cold water
  • 1 envelope Unflavored gelatin
  • 1/4 cup Sugar
  • 1/2 cup Packed fresh mint leaves, plus more for garnish
  • 1/2 cup Bourbon
  • 10 fresh Raspberries

Pour the water into a medium saucepan and sprinkle the gelatin over. Let stand five minutes, then add the sugar and heat over medium heat, stirring until the sugar dissolves. Remove from the heat, add the mint leaves, cover and let stand 10 minutes. Pour through a fine-mesh strainer into a large measuring cup and stir in the bourbon.

Using 10 2 oz polystyrene souffle cups, put one mint leaf and one raspberry in each cup. Fill each cup with the liquid, then transfer to the refrigerator and refrigerate until set, for about 4 hours.
