How to Make a Caipirinha

How To Cocktail: Caipirinha

Feel like you’re on a beach in Rio with this simple, classic tropical drink from Brazil. Top San Francisco bartender H. Joseph Ehrmann shows you how to make a Caipirinha.


  • Half a lime, cut into wedges
  • 2 tsp Sugar (or 1 oz simple syrup)
  • 2 oz Cachaça
  • Garnish: Lime wheel (optional)
  • Glass: Double Old Fashioned

In a double Old Fashioned glass, muddle the sugar and lime. Fill with ice and add the cachaça. Stir briefly and garnish with a lime wheel if desired.

    It should be a whole lime. No syrup! And please remove the white part in the middle, it makes it bitter! I usually add the cachaça after the ice, but I guess it won't make much of a difference.

    Hi, guys. A traditional caipirinha it's made with with sugar. Buta it's kind of funny: brazilians have several ways to make caipirinha. I love to use brown sugar (and it turns a nice color, even someone thought it's seems "dirty" indeed), and I had try it with honey as sweetner and an extra add of cynamon. This is far from the original, but tastes really good, you should try.

    Somethings about caipirinha:

    * Don't use simple syrup, use real sugar. The "not mixing problem" is a part of caipirinha, you stir all the time between syps.

    * For a glass like the video one I recommend a FULL lime, not just half. Also, it's good if you remove the white stripe inside the lime, there is the bitterness of lime. If you search in Youtube how to cut a lime for a caipirinha you will find a bunch of ways to remove it and to cut the lime. It's good if all parts have the same shape, and you can do it cutting in 8 pieces.

    * Don't muddle too much, the lime is your friend and you have to extract juices and oils, not murder the fruit. The way he muddle on video add extra bitternes from peal wich reveals itself as time goes by.

    * There's not an original recipe for caipirinha, everybody have their measuraments. The only guidelines (not rules) is one lime, sugar, ice to fill the glass and cachaça. There's not a measurement to cachaça (yeah, you read that), what turns all caipirinhas different; you can make it double, triple or in a huge glass to share with your friends. And you will choose if it's harder, sweeter or more citric. It's a cocktail with no recipe!

    * If we have no recipe, we have to look for guidelines. One more of them is to fill the glass with ice after you muddle the lime with sugar. This will provides an enough space to cachaça and you just have to complete the glass. Trust me, I make caipirinhas here in Brazil for more than a decade and when I choose a glass and knew my amounth of lime, I just fill nicely with ice and then complete with cachaça... And thats it!

    It's my signature cocktail, I can't deny. And I like it!

    @joerund my family is from Brazil and I've been drinking these for years (stateside and in Brazil), I've never seen them made with brown sugar only white sugar. It might be worth a try though, but the brown sugar might make the drink look dirty.

    I always thought it was brown sugar in a caipirinha.. Am I wrong?
