Down a flight of stairs, the 18,000 square-foot subterranean lounge-restaurant-performance venue offers an experience like nowhere else in Chicago. The aforementioned librarian, Robert Giles, spent 10 years living across the river from Louisville and elsewhere in Kentucky so his bourbon knowledge runs deep. He works with top distillers to ensure Untitled gets first crack at many new and unique barrels: He has personally tasted more than 120 barrel-aged bourbons. That experience has helped Giles build out a 300-plus-strong bourbon collection that always includes around 20 limited-edition bourbons. And at more than 500, Untitled claims to have the largest American whiskey selection in the world.
