Todos Santos

Formerly known as simply Quiote’s basement bar, Todos Santos came into its own in October 2017, around the same time the modern Mexican restaurant was named to the Michelin Bib Gourmand list. Steered by mezcal-centric mixologist Jay Schroeder (ex–bar director for Rick Bayless’ restaurant group), the tastefully stark lounge serves a half-dozen cocktails based primarily in agave spirits, including sotol, raicilla and an impressive range of mezcal.
