WHY HERE: Opened in 1947 by a woman named Mariam Profit, The Aero Club was an airport-adjacent bar catering to pilots. In the ’70s, it became a cop bar, then a hangout for Greyhound bus drivers in the ’80s. Since 2004, owner Bill Lutzius turned it into a world-class whiskey bar.

WHY NOW: Boasting more than 800 whiskeys and counting, there’s a seemingly never-ending list of international whiskeys, heavy on scotch and offering single malts, blends and special editions of every possible variety.
