Prairie School

(Permanently closed) Jim Meehan’s long-awaited new bar is a stunning ode to Frank Lloyd Wright, the famous 19th-century architect with whom Meehan shares a suburban upbringing—and a penchant for Japanese culture. Located in Chicago’s burgeoning Fulton Market district, the cushy leather-trimmed lounge serves a dozen or so cocktails starring carefully curated indigenous ingredients, making for well-balanced odes to America’s heartland. Additional specials rotate with every new seki, Japan’s traditional 24-season calendar.

THE DRINK TO DRINK: ​The Whisky Highball: Suntory Toki whisky tapped from the bar’s highball machine, served over stamped ice in a collector’s-edition ceramic tumbler, which is available for purchase as part of Prairie School’s mug club

KNOW BEFORE YOU GO: ​Crif Dogs it ain’t. Prairie School’s food is decidedly Midwestern (cheese curds, Friday fish fry) and decidedly delicious.
