WHY HERE: Also the name of a 1937 French gangster film, this distinctive subterranean bar with its curved ceiling feels like an elegant bunker in which one might drink away the end of the world. Jeffrey Morgenthaler (Clyde Common) and his team serve up elegant craft cocktails with a big hit of fun.

WHY NOW: Though there are plenty of classic early-20th-century drinks on the menu, the focus is on elevating otherwise kitschy cocktails from the 1970s and ’80s. Start with an Amaretto Sour (amaretto liqueur, overproof bourbon, lemon juice and egg white), and wrap up the night with one of the best Grasshoppers (crème de menthe, crème de cacao, Fernet-Branca, vanilla ice cream and sea salt) you’ll ever find.
