WHY HERE: Since NYC cocktail legend Audrey Saunders opened Pegu in 2005, this airy British colonial-themed craft cocktail spot has been known for producing (and training) many of the best-known bartenders in the city.

WHY NOW: Even in the era of Hudson Yards megaspots, Pegu feels spacious and relaxing compared to much of the downtown scene. The bar (and Saunders) helped repopularize gin in the 21st century, with cocktails like the Gin-Gin Mule, Earl Grey MarTEAni and the eponymous Pegu Club.
