One of Chicago’s premier Cuban restaurants, Paladar also has a space within the restaurant called Rum Bar. As its name indicates, you’re in for some quality drinking. With a large Havana Club logo emblazoned on the Rum Bar’s wall, which features a 12-foot ceiling made from repurposed wood scraps reflecting the “whatever you can use” practice in Cuba, Paladar pays respect to rum’s history and impact on the Caribbean. Owner Jose Gonzalez has compiled a well-researched list of about 60 rums, most made for sipping. Take advantage of the various rum flights to get further acquainted with the spirit.
THE DRINK TO DRINK:
Paladar offers about 10 different scratch-made Mojitos from pineapple to coconut and guava to blackberry and, of course, traditional or the “ultimate,” made with sugar cane juice.
