Hidden upstairs inside acclaimed industry favorite, ABV, Over Proof opened in February with an innovative four-different-bars-over-a-year concept in its intimate space. The first two concepts focused on rum and whiskey, while this new concept (running August 10 through October 28), Este Oeste, is all about Spain’s coastal regions expressed in Over Proof’s ticketed tasting-menu format ($75 per person). This is no stuffy food- and cocktail-pairing menu but rather a playful array of bites and cocktails in a Mediterranean-themed setting.
THE DRINK TO DRINK: Going all Spain with a gin and sherry focus, five paired cocktails include a San Francisco tribute, the Don Karlos, a twist on a classic Fog Cutter, flipping gin and sherry ratios with lemon and orgeat; or the Señor Txotx, a combination of Spanish gin, oloroso sherry, honey and cider.
KNOW BEFORE YOU GO: ABV chef Collin Hilton and sous chef Nick Salazar turn out Spanish-influenced dishes like brown-butter-poached prawns with romesco verde or Hand Paella—hand-pressed rice griddled a la plancha with bay shrimp, sweet chorizo and chanterelle aioli.
