WHY HERE: Founded by cocktail vets Richard Knapp and T.J. Lynch, this visually unassuming Nolita gin joint is named for the 1800s nickname for “ruinous” gin. While the bar seems low-key, it attracts some of the city’s best bartenders, as well as visiting guests, and the well-made drinks reflect it.
WHY NOW: New cocktails, reflecting all the trends of the moment, roll out constantly. It was one of the first serious drink spots in the city to offer frozen riffs on classic cocktails. A hair-of-the-dog Bitchin Brunch is served till 5 p.m. on weekends.
