This tiny eight-seat boîte, tucked away from the bustling Chicago Athletic Association Hotel’s main lobby, specializes in extremely rare vintage spirits procured by the kind of people who make their living at booze auctions. Candlelight, soft music and hushed voices create a special reservations-only atmosphere, with price tags to match.

THE DRINK TO DRINK: A Vieux Carré made with cognac as old as your grandfather; a dram of Cynar from the beforetime; pre-fire Heaven Hill—the list is as deep as the pockets you’ll need.

KNOW BEFORE YOU GO: ​Cocktails on the menu average $45, preceded by a quaffable starter—an amuse-booze, if you will—from the encyclopedic mind of Paul McGee. Off-menu requests are welcome.
