The PlumpJack Group team of Jacques Bezuidenhout and Ken Luciano (Forgery, Wildhawk) has recently revived what was the clubby MatrixFillmore to its historic musical glory, with quality cocktails. The Matrix was originally opened by Jefferson Airplane’s Marty Balin, hosting live shows including everyone from Bob Marley to The Velvet Underground.
THE DRINK TO DRINK: Bar manager Christian Clark (formerly at Tosca Cafe and Alamo Drafthouse) pulls from musical and poetic references for cocktail inspiration. Go crowd-pleasing with the Quicksilver Mule (Avión blanco tequila, lime, pineapple and tamarind gomme syrup, fresh ginger solution and club soda) or esoteric with Shango Fix (Del Maguey Vida mezcal, lime, Bénédictine, PX sherry and cucumber), referring to the poem “Shango,” read here by Carlos Santana back in the day.
