Lord George is not new. The South Park bar opened in 2015 with the unofficial tagline of “cocktails, oysters and mischief,” deftly run by owners Ezra Berman and Miles Palliser. But they’ve just launched a new concept, Mavericks, worth heading out for. Starting this April with an enchanting Alice in Wonderland theme and talented Portland-based bartender Kate Bolton’s menu, it now features a changing, seasonal menu created by different guest bartenders—some from other cities, some local (as Bolton used to be, running Maven and Novela). Each three-month menu will be wildly different, playful and delicious, if this inaugural theme is any example. Even better: Lord George will donate 50 cents of every Maverick cocktail sold to the guest bartender’s charity of choice.
THE DRINK TO DRINK: Kate Bolton’s menu is full of hits to please a range of palates with cheeky Alice nods, like the Cheshire Cat (tequila, pineapple juice, coffee tincture, fresh lemon juice and egg white) with its knowing grin sprayed onto the egg white. We adore the complex yet utterly drinkable tea-time tribute to the crazy one himself, the Mad Hatter Punch (Earl Grey–tea-infused gin, Pimms No. 1 Cup, raspberry liqueur, fresh lemon juice, maple syrup, cucumber and a bittered sugar cube), served in a teacup.
KNOW BEFORE YOU GO: Charcuterie, cheese, bar bites and oysters are all on the menu. But call on the Lord’s Platter with a few friends to dive into a shimmering seafood tower of 24 oysters, 12 plump Gulf prawns and tuna tartare.
