Conveniently hidden along Napa’s main thoroughfare, Highway 29, Charlie Palmer’s Harvest Table at Harvest Inn is blessed with lead bartender Joel Pfeifle’s balanced, refined cocktails. The low-proof French Margarita (Noilly Prat dry vermouth, Imbue Petal & Thorn vermouth, lime and Clément Canne Sirop from the French Caribbean island of Martinique, and a rim of dehydrated serrano chiles and black Hawaiian sea salt) is deservedly the house hit since opening in May 2015. But there are many delights, both spirit-forward or garden-fresh, pulling from one of five house gardens designated specifically for the bar.

THE DRINK TO DRINK: Summer is ideally exemplified in the Smoke Eater, a subtly smoky-fresh mix of blanco tequila and mezcal with lime, a house strawberry shrub and mint syrup.

KNOW BEFORE YOU GO: Executive chef Levi Mezick roasts his beloved, decadent truffle butter chicken for two, but don’t miss his lighter dishes, like vadouvan-roasted carrots in house-made buttermilk and pistachio oats granola or a silky scallop crudo accented by pickled serrano chiles, lemon, yuzu, avocado and cactus pear emulsion.
