This new Highland Park cocktail bar, by Bestia alumni and Courage & Craft proprietors, is more of a speakeasy in location than in vibe. No rules or dress codes, just a low-key neighborhood bar for grabbing well-crafted drinks. The cocktails are classics with a twist but “twist” as in a Daiquiri with Chartreuse and strawberry-infused Campari in a Boulevardier.
The Drink To Drink: Sure, you’ve had a Manhattan before, but have you had a charcoal-filtered one? Inspired by a process used by Tennessee whiskey makers to remove congeners that affected the flavor of the spirit after fermentation, here it lends the cocktail a silky texture and smooth flavor.
