It's a great place to down tequila, mezcal and pisco or, if you're feeling extra frisky, a boozy slushie. As a bonus, the smoked squash quesadillas and Peruvian chicken make the perfect accoutrement.

WHY NOW: Owner Matt Dillon has already proven his chops with his other spots, Bar Ferdinand and Sitka & Spruce, so it's not surprising Copal fits in well. Go for the fiesta, stay for the food, and then order another round of fizzy Palomas.
