Chicago’s Randolph Street is a super-hot restaurant row. There are big-name chefs opening standing-room-only places at a furious clip around the West Loop drag. It only makes sense that a high-end distillery would follow suit. CH Distillery first started with vodka made exclusively from Illinois grain, but has since expanded to also offer gin, whiskey, limoncello, aquavit, rum, amaro and eau de vies. That said, if you’re into vodka, this is one of the premier spots in town. With spirits crafted by a team of self-proclaimed science nerds and led by owner Tremaine Atkinson, CH Distillery offers a sleek, cool environment in which to hang out, sip award-winning premium spirits and dine on shared plates of lamb tartine gnocchi with pork belly and pecorino; and charcuterie. Pick up a few bottles at the on-site retail space so you can continue to enjoy when you leave.
