WHY HERE: Formally known as Commonwealth (the name changed January 2018), this Kentucky bourbon bar comes to the city as an ode to Southern hospitality—and drinking, a lot of Southern drinking. After all, the new name refers to the naturally filtered stream water that both Kentucky and Tennessee use to distill that famous brown spirit.

WHY NOW: Though bourbon is the specialty of this Belltown bar, the skilled bartenders have also whipped up some unusual tipples such as the Blue Grass Lemonade (rye, lemon, St-Germain elderflower liqueur, lemon and lavender) and the Genuine Risk (bourbon, mezcal, lime, lemon and sugar).
