WHY HERE: Chef Javier Plascencia made his name reinventing the cuisine of Tijuana, and now he has crossed the border with this classy modern-Mexican spot, complete with elegant Baja-style seafood and, of course, a long list of tequilas and mezcals.

WHY NOW: The agave-spirit twists on classic cocktails like the Javier Wallbanger, Paloma Jimenez and beer-topped Lagerita are a great bet, but if you’re feeling adventurous, it’s also the spot to try a more obscure Mexican spirit, with a nice set of raicillas, bacanoras and sotols.
