Jonny Raglin (who oversees all bars for The Absinthe Group) and bar manager Collin Nicholas keep it Spanish at the horseshoe-shaped bar in Spanish destination, Bellota, a spacious, chic restaurant in the Airbnb HQ building. Look for Spanish cider, vermut (vermouth) and sherries on draft in barrels above the bar, heavenly paired with pintxos passing by via cart or shareable rounds of paella (try the fantastic fideua, a paella of the unique fideua noodle and rice with Gulf shrimp, scallops, green beans, squid and squid ink).
THE DRINK TO DRINK: The draft offerings are perfect with food, as are choice Spanish wines. Cocktails feature Spain’s greats, like the La Celestina, showing off Atxa vino rojo vermouth and fino sherry with gin, Cynar and caraway. Other spirits shine in drinks like the Amor se Paga, featuring mezcal, shiso brandy, Campari, kumquat, fresh lemon juice and dandelion.
