WHY HERE: Located in the former Milk & Honey space since 2013 and helmed by M&H alumni Sam Ross and Michael McIlroy. It’s kept the refinement, and excellent cocktails like Sam Ross’s now-iconic Penicillin, but scrapped the austere reservations-only policy. It’s first-come, first-served now.

WHY NOW: Cocktail geeks come for the immaculate drinks and to pay homage to founder Sasha Petraske, who passed away in 2015, signaling an abrupt end to the Milk & Honey legacy. For fans of the mixed drink, this is their CBGBs.
