WHY HERE: Harvard faculty member David Edwards and his team opened ArtScience in 2014 as an experimental forward-thinking restaurant and bar informed by the latest science and looking to the future of food and drink. Tibetan refugee, bar director and partner Tenzin Samdo came on board in 2017, pulling from his arts background for his innovative cocktails.

WHY NOW: Experiments have included alcoholic “paint” garnishes made by reducing ingredients to essences, while cocktail ingredients range from lotus leaves and sandalwood to Macanudo-cigar-smoked cherries.
