It might seem like a ladies parlor from years past, but this new sparkling wine salon is anything but flossy. Taking a contemporary approach to the Grande Dame of wine, Air’s demystifies Champagne and encourages guests to enjoy it whatever the time or occasion. The menu is a 101 on sparkling wine definitions, and the extensive (and surprisingly moderately priced) bottle list offers sparklers from Champagne and around the world (flights of three wines are customized based on a customer’s mood). And it’s all in a setting that would please the Crawleys.
THE DRINK TO DRINK: If cocktails are more your speed, they have you covered. Consider the Summer Strawberries (Massican sparkling wine, Cocchi Americano rosa apéritif and bitter lemon soda) or the WWBMD (What Would Bill Murray Do?), a crisp concoction of Champagne on ice with expressed lemon juice.
KNOW BEFORE YOU GO: Owner Ariel Arce was the wine director at neighboring Riddling Widow and Birds & Bubbles before this and did a turn at Chicago’s Pops for Champagne.
