The secret to this spicy, warming Manhattan variation by Danny Kuehner, the bar manager at Madison in San Diego, is an essential oil blend of cinnamon, clove, eucalyptus, radiata, rosemary and lemon, which is purported to have immune-supporting and antioxidant properties. At the bar, Kuehner uses Lo-Fi gentian amaro from California, which can be hard to find; this recipe substitutes sweet vermouth and cherry liqueur or red wine to lend a similar flavor.
