The Aperol Spritz became a casualty of war in 2019. While we continue to mourn its untimely death (read: drink them anyway because they’re delicious), the “New York Times” article that started it all at least gave rise to the fact that the spritz isn’t confined to just one recipe. The wine-based cocktail calls for creativity, so we asked the DrinkWire community how it’s mixing up a spritz this summer and rounded up some of the best.
This spritz variation is bursting with botanical flavors. It batches well, so get out a pitcher and simply top with bubbly before serving.

The easiest way to switch up an Aperol Spritz is to ditch the Aperol itself. Next time you’re at your local liquor store, search for another apéritif that might be fun to try. The Summer Breeze uses Cocchi Americano Rosa and two liqueurs to achieve a whole new flavor profile.

The classic spritz in popsicle form? There might be nothing better this summer. Serve the icy treats with a glass of prosecco all season long for the ultimate warm-weather treat.

Mix things up in a whole new way by incorporating a digestif into the cocktail. This twist uses banana-infused cognac to make things a little boozier and a lot more complex.

Grilled pineapple-infused Aperol and coconut water take this spritz for a tropical spin. If your summer involves vacationing near the ocean, this is the recipe you’ll make over and over again.
