There’s more than one way to drink a Margarita. That is evident from the classic serves: up, on the rocks or frozen. But, as it turns out, you don’t even have to drink the cocktail at all—you can eat it. Look no further than these Watermelon-Blackberry Margarita Popsicles, which turn this all-time favorite beverage into a solid treat.
This recipe comes from Chilled Magazine and features Pura Vida tequila, triple sec, fresh watermelon, limeade and blackberries. The invigorating combination is hydrating and delicious, pairing the classic powerhouse trio of tequila, orange liqueur and lime with sweet melon and tart berries. Be sure to use blanco tequila, which lends the popsicles a fresh, sweet agave note, rather than the oaky vanilla and caramel notes you’ll find in aged varieties.
The popsicles barely take more effort than your typical Frozen Margarita. You simply blend the ingredients together and pour out the contents. But, in this case, those contents must sit in the freezer for a few hours before you can enjoy the frozen fruits of your labor.
If you love popsicles and cocktails, make these for your next summer gathering. This recipe serves six, but can be scaled up to feed a crowd. And evidence shows that crowds love a good popsicle. Of course, these are adult pops, so you can make a kid-friendly version by omitting the booze and adding a little more limeade to make up for the volume of liquid. That way, everyone gets to join in the fun.
