Chamomile gin and pineapple juice? This cocktail from Houston cocktail bar Julep is delightfully unexpected.
Add all ingredients except the apple cider to a shaker and fill with ice.
Shake, and strain into a Collins glass filled with fresh crushed ice.
Fill the top of the glass with crushed ice and layer the apple cider on top.
Garnish with chamomile buds and serve with a long straw.
*Chamomile-infused dry gin:
Combine ingredients in a jar or bottle and let sit for three hours. Strain out the chamomile and store, refrigerated, up to two weeks.
