It's not traditional, but this drink by bartender Trudy Thomas is tropical and tasty.
- 1 pineapple wedge
- 4 mint leaves
- 1/2 ounce agave nectar
- 1 ounce white rum (such as Papagayo)
- 1/4 ounce Navan vanilla liqueur
- 2 ounces club soda
- Garnish: pineapple wedge
- Garnish: mint leaf
Muddle the pineapple, mint and agave nectar in a mixing glass, being careful not to pulverize the mint.
Add rum, Navan and ice and stir.
Strain into a rocks glass and top with club soda.
Garnish with a pineapple wedge and a mint leaf.
