Magic Cotton Candy Daiquiri

The Daiquiri is a classic cocktail that has been sipped since the turn of the 19th century. Over the decades, it has enjoyed a rollercoaster rise and fall, going from a revered refreshment to a bastardized version of its former self, characterized by blenders and artificially flavored mixed. These days, it’s back on top, once more a respected member of the current cocktail canon. And yet, bartenders still manage to tweak the traditional recipe in new and unusual ways.

Variations like the Hemingway Daiquiri and freshly made Strawberry Daiquiri will always have their place on the bar. But occasionally the bounds of the cocktail’s limits are tested, like you find with this Magic Cotton Candy Daiquiri. This fun, irreverent take on the classic swaps out sugar (usually simple syrup) for cotton candy, that fluffy, sugary childhood treat.

When the cold liquid is poured over the cotton candy in the glass, a bit of magic happens, and the cotton candy melts, disappearing before your very eyes. The sugar incorporates into the rum and the tart lime, helping to balance the cocktail, and the liquid’s color changes depending on the type of cotton candy you choose. A topper of Champagne adds effervescence to the drink and also provides a welcome hint of dryness to counter the sweetness. Ingredients

  • Gourmet cotton candy

  • 2 ounces light rum

  • Juice of 1 lime

  • Champagne, chilled, to top

  • Garnish: lime wheel

Steps

  1. Place a big fluff of cotton candy in a cocktail glass.

  2. Add rum and lime juice to a shaker with ice, and shake until well-chilled.

  3. Strain into the glass, dissolving the cotton candy.

  4. Top with chilled Champagne.

  5. Garnish with a lime wheel.
