Lavender Honey Cream

Lavender is often used in aromatherapy and sleep aids because it’s known to promote relaxation and calmness. If you’d rather reach for a good cocktail than a scented candle, you’re in luck: San Francisco bartending vet H. Joseph Ehrmann created the Lavender Honey Cream, a luscious drink that will have you melting into your chair.

He starts with Square One botanical spirit, a 90-proof liquor made from organic rye that is infused with the essence of eight botanicals, including chamomile, lemon verbena, lavender and citrus peels. Think of it like an herbal and floral vodka, or a juniper-free gin. He mixes that with homemade lavender honey syrup, which you can quickly create at home, plus heavy cream and egg white. You’re probably feeling sleepy now just from reading the ingredients list.

Shake everything together—first without ice to emulsify the egg white with the liquid ingredients and then with ice to chill the drink—and you’ll soon enjoy a rich, pleasantly sweet cocktail with a friendly punch of botanicals. The Lavender Honey Cream is a calming nightcap that ushers in the perfect ending to a long day. Or any day. Add a few lavender blossoms on top, and it’s like a free aromatherapy session with each sip.

Ingredients

  • 1 1/2 ounces Square One botanical spirit
  • 1 ounce lavender honey syrup*
  • 1 ounce heavy cream
  • 1 large egg white
  • Garnish: lavender blossoms

Steps

  1. Add the botanical spirit, lavender honey syrup, heavy cream and egg white to a cocktail shaker and dry-shake (without ice) vigorously.

  2. Add ice and shake again until well-chilled.

  3. Strain into a chilled coupe glass.

  4. Garnish with a few lavender blossoms.

*Lavender honey syrup: Combine 1/4 cup lavender honey with 1/4 cup boiling water. Stir gently until the honey is dissolved. Let cool and store in a squeeze bottle.
