A burst of C02 gives the traditional Horse’s Neck a breath of fresh air.
- 1 1/2 oz Hennessy V.S.O.P Privilège cognac
- 3/4 oz Honey ginger syrup*
- 3/4 oz Fresh lemon juice
- 2 dashes Angostura bitters
- Garnish: Lemon peel
Add all the ingredient except the C02 to a shaker with ice and shake.
Strain into a Collins glass.
Top with the C02 and lemon peel.
*Honey ginger syrup: Combine 1 cup water, 1 cup sugar, 1 cup honey, 5 cup ginger juice and 2 orange peels in a saucepan over medium heat. Whisk until the sugar dissolves, then cover and remove from the heat. Let cool to room temperature and fine-strain.
