Transport yourself to cognac with a Champagne cocktail inspired by the aromatics and spices of the region.
- 1 oz Hennessy V.S.O.P Privilège cognac
- 1/4 oz Fresh lemon juice
- 1/4 oz Rich honey syrup*
- 1/4 oz Lindera Farms honey vinegar
- 1 dash Clove tincture
- 1 dash Sea salt
- 2 oz Brut Champagne, to top
- Garnish: Lemon twist
Add all the ingredients except the Champagne to a shaker filled with ice and shake.
Double-strain into a chilled coupe.
Top with the Champagne.
Garnish with a lemon twist.
*Honey syrup: Add 1/2 cup honey and 1/2 cup water to a small saucepan over medium heat. (You can experiment and decide how much of a honey flavor you want in your syrup. The more honey you use, the thicker the syrup and stronger in flavor it will be.) Stir until blended. Strain into a jar, and seal tightly with a lid. Will keep for 1 month in the refrigerator.
