Thoroughly testing the depth of Star Wars nerdiness, Billy Nichols, the bar manager at Faun in Brooklyn, named this concoction after the species of rebel spies who provided the Rebellion with the plans to blow up the Death Star in Return of the Jedi. “I’m a Star Wars nerd,” says Nichols. “I thought this cloudy tequila cocktail looked the part.”

Ingredients

  • 2 ounces chamomile-infused tequila*
  • 1 barspoon absinthe
  • 3/4 ounce lemon juice, freshly squeezed
  • 3/4 ounce honey syrup
  • 1 egg white
  • Garnish: dried chamomile blossoms

Steps

  1. Add all ingredients into a shaker and vigorously dry-shake (without ice).

  2. Add ice and shake again until well-chilled.

  3. Strain into a chilled coupe.

  4. Garnish with dried chamomile blossoms.

*Chamomile-infused tequila: Add 4 standard tisane bags of chamomile tea to a 750 mL bottle of blanco tequila, and allow to sit in a dry, cool place for 1 1/2 hours. Then discard the tea bags and strain for any particles.
