Add all ingredients to a shaker, and dry-shake to froth the egg white.
Add ice, then shake again.
Strain into a chilled coupe.
Garnish with dried chamomile blossoms.
*Chamomile-infused tequila: Add 4 standard tisane bags of chamomile tea to a 750 mL bottle of blanco tequila, and allow to sit in a dry, cool place for 1 1/2 hours. Then discard the tea bags and strain for any particles.
