The Perfect Penicillin Cocktail

If you’re looking to make the most delicious version of the Penicillin, you’ll need to start with a crisp and richly fruity Speyside single malt and top it off with a smoky peated whisky.   • 1 3/4 oz BenRiach Speyside 10-year-old whisky Buy Now
  • 3/4 oz Fresh lemon juice
  • 3/4 oz Honey ginger syrup*
  • 1/4 oz BenRiach Curiositas 10-year-old whisky Buy Now
  • Garnish: Candied ginger; Lemon zest


  1. Add the Speyside whisky, lemon juice and honey ginger syrup into a shaker with ice and shake.

  2. Strain into a rocks glass over fresh ice.

  3. Top with the Curiositas whisky.

  4. Garnish with candied ginger or lemon zest.

  5. *Honey ginger syrup: Combine 1 cup honey, 1 6-inch piece of ginger (peeled and thinly sliced) and 1 cup water to a saucepan over high heat and bring to a boil. Reduce heat to medium and simmer for 5 minutes. Chill overnight, then strain and keep refrigerated for up to one month.
