For football season, we had a bartender from each NFL team’s hometown provide the perfect cocktail to represent their team.
“Our goal in creating a cocktail for the Bills was to capture the pride of the fans, whose loyalty is steadfast win or lose,” says bartender Jeff Yannuzzi of Buffalo’s Toutant. “Abbott Road leads into the stadium area where the real Buffalo Bills fan spirit lives—the tailgate lots! We hope the drink represents the strength we have in numbers, and the power of combining our differences together to make something great.”
Yannuzzi’s drink puts to use spirits from Buffalo distilleries, Tommyrotter American gin and Lockhouse Ibisco bitter (a New York State aperitif similar to Campari), as well as grapes from nearby vineyards and bitter local wildflower honey.”
Add all of the ingredients to a mixing glass with ice and stir until cold.
Double-strain over a large ice cube into a rocks glass, and garnish with an apple skin twist and green apple foam.
*Concord grape shrub: Combine 1 cup pureed concorde grapes (pushed through a sieve to remove seeds and skins) with 1 cup raw sugar in a small saucepan over medium heat. Stir until the sugar is completely dissolved. Add 1/4 cup white wine vinegar, 1/4 cup red wine vinegar and a pinch of salt. Bring to a boil and allow to reduce by half. Cool to room temperature before using. Will keep in the refrigerator for at least 1 month.
**Green apple foam: In a bowl, combine 450 grams Granny Smith apple juice, 10 grams citric acid, 120 grams granulated sugar and 5 grams gelatin. Stir and pour into an iSi canister, and charge once before using to top the drink.
