Add all of the ingredients to a shaker, and fill with ice.
Shake and strain into a snifter, and garnish with a lemon peel.
*Pineapple syrup: Add 4 cups (500 grams) of pineapple and 1/2 cup (125 grams) of sugar to a container, and refrigerate overnight to macerate. Transfer to a medium saucepan, add 1/2 cup (125 grams) of water, 1 teaspoon (1.25 grams) of ground cinnamon and 1/2 teaspoon (.625 grams) of ground nutmeg, and bring to a simmer over medium-high heat. Cook for 20 minutes. Strain through a fine-mesh sieve and let cool. Refrigerate for up to 1 week.
**Walnut orgeat: Add 1/2 cup (125 grams) of crushed walnuts to a medium saucepan over medium-high heat, and toast until fragrant for 90 seconds. Add 1 cup (250 grams) of water and 1 cup (250 grams) of sugar, bring to a low simmer, and cook, stirring for 15 minutes. Blend the mixture while hot using an immersion blender, then refrigerate overnight. Strain through a fine-mesh sieve. Refrigerate for up to 2 weeks.
