Gergő Muráth, the bar manager at London bar Trailer Happiness, believes this shrub is the best he’s ever created, and it’s the vinegar that makes all the difference. “Opposite Trailer, there's a super-high-end French grocer, and they stock a Pineau des Charentes vinegar. It's mind-blowing!” he says. Here, it joins with ripe peaches and spices to create a beautiful summer shrub. Note that you’ll need to steep the ingredients for two days. We promise it’s worth it.
Ingredients
- 2 cups Blanc Pineau des Charentes vinegar
- 3 ripe peaches, sliced10 cloves
- 2 star anise pods
- 1 cinnamon stick
- 2 cups simple syrup
Steps

Add all ingredients except the simple syrup into a bowl and steep for 2 days.

Add simple syrup and stir to combine. Will keep, refrigerated, for up to 10 days.
