Your cocktail doesn’t require a big, boozy base. For a delicious drink that’s low-ABV and yet still seems spirit-forward, let white port and cream sherry take center stage.
The Noble One, created by Javelle Taft, the head bartender at Death & Co. NYC, is a riff on a classic Bamboo. It calls for equal measures of white port and pale cream sherry, plus a bit of apricot liqueur and honey syrup and a dash of orange bitters. “It’s meant for the spirit-forward imbiber that wants to sip something similar in temperature and texture but lighter on the alcohol content,” says Taft.
To pull together these complex flavors, Taft uses a bolder style of white port “that’s rich and nutty on the nose but quite dry on the finish,” he says. “Drier-style ports are great to work with because you can add layers of flavors without it being sweet or marzipan-like.”
Ingredients

1 1/2 ounces Quinta do Infantado white port

1 1/2 ounces Alvear pale cream sherry

1 teaspoon Massenez Orchard apricot liqueur

1/2 teaspoon honey syrup

1 dash orange bitters

Garnish: lemon twist
Steps

Add all ingredients into a mixing glass with ice and stir until well-chilled.

Strain into a rocks glass.

Express the oils from a lemon twist over the drink and discard the twist.
