What’s the Difference Between Mezcal and Tequila?
Mezcal is sometimes referred to as “tequila’s smoky cousin”—but you may be surprised to learn that tequila is actually a type of mezcal. Technically speaking, mezcal is any distillate of the agave plant produced in Mexico, and tequila certainly meets those qualifications. There are important distinctions, though: To be called tequila, the spirit in question must be made in one of five specific Mexican states (including Jalisco, where the town of Tequila is located), and must be made exclusively from the blue Weber variety of agave. Meanwhile, the term “mezcal” refers to an agave distillate made from one of nine specific Mexican states (with the vast majority of production taking place in Oaxaca), which may be made from dozens of different agave varieties—either as a single-variety expression or as a blend. Finally, while the agave for tequila production is cooked above ground, agave destined to be made into mezcal is traditionally roasted in underground pits, which gives the spirit its characteristic smoky flavor.
What Are the Different Types of Tequila?
On the most basic level, premium tequila can be grouped into three categories, each of which refers to how long it’s been aged: blanco (or “white,” a tequila that’s spent less than two months aging in barrel), reposado (or “rested,” aged in a barrel between two and six months), and añejo (or “aged,” specifically between six months and one year). Increasingly, consumers are paying top dollar for tequilas marketed as extra añejo (aged in a barrel for longer than a year). Another emerging category is cristalino, which refers to an aged tequila that’s been filtered so that it looks clear but still has the complexity of something older than a blanco. Finally, let’s not forget that most basic of categories, “mixto”—a term you’ll never see on a label—refers to bottom-shelf tequila which is not made out of 100% blue Weber agave, but instead has various other components making up part of the blend (such as molasses and high-fructose corn syrup).
