    He's not using the old-school "small speed shaker", he's using the newer method of 2 metal tins that are designed to be shake together. It's all the rage now -- see Dave Arnold's "Liquid Intelligence" if you don't believe it.

    Brian maybe a top bartender, but he is doing this process wrong. The small speed shaker never is suppose to be used with the large metal shaker. They were never made to go together. And when using the glass mixer and the large metal shaker. You start with mixing your ingredients in the glass mixer first, hence the name. And put the large metal shaker on top. I see bartenders do this wrong all the time.

    best to shake eggs with all other ingredients first, THEN add ice and reshake
