Virgin Hotels Chicago’s Jon Harris gives new life to an overlooked classic. This is how he adds his personal touch to the cognac cocktail.

INGREDIENTS

  • 2 oz Hennessy VSOP cognac
  • .5 oz Sesame orgeat*
  • 2 dashes Dr. Adam Elmegirab’s Teapot bitters

Glass: Martini
Garnish: Lemon peel

INSTRUCTIONS
Add all of the ingredients to a shaker, and fill with ice. Shake and strain into a Martini glass. Garnish with a lemon peel.

*Sesame orgeat: Add .5 cup of black sesame seeds to a small skillet over medium heat, and toast for 90 seconds. Set aside and let cool. Add 2 cups of boiling water and 3 cups of sugar to a bowl and stir until dissolved. Transfer the syrup and sesame seeds to a blender and blend for 1 minute. Refrigerate the mixture overnight. Skim off any oils or solids that have floated to the surface and strain the mixture through a cheesecloth-lined fine-mesh sieve, discarding the solids. Stir in .5 mL of Amoretti Cherry Blossom (Sakura) extract and .25 mL of Amoretti Wild Strawberry extract. The orgeat will keep for at least 1 month in the refrigerator.
