Derek Schreck and Jordan Delp, the respective owner and managing partner of Tom Bergin’s, an Irish pub that’s been a local favorite since 1936, have a bit of a whiskey obsession. So they converted the pub’s attic into Vestry, a members-only speakeasy that shows off (and pours glasses of) their collection of 198 North American whiskies that date back as far as 1906. The collection even includes bottles from more than 40 now-shuttered distilleries. You can get your taste of them all when Vestry opens in September 2015.
THE DRINK TO DRINK:
Black Maple Hill. Vestry has all five of the original bottlings of this cult favorite bourbon.
KNOW BEFORE YOU GO:
Vestry is only for the truly dedicated: An annual membership costs $1000.
