Everything about Toby Maloney’s new lounge was an anomaly when it opened in 2007: its focus on craft cocktails (before Chicagoans knew what they were), its lack of proper signage, its list of rules ranging from “no cell phone use” to “no Grey Goose.” Nearly a decade later, little has changed—including those consistently excellent drinks—and there’s still a line out the door. And these days, the city’s best bars are run by TVH alumni.
