Celebrity chef José Andrés’ outpost in the luxurious SLS Hotel might be the most beautifully designed restaurant in LA, with gorgeous molecular gastronomy–inspired tapas to match. All the cocktails are nice, and there’s a pretty good selection of spirits. But the reason the place makes this list is one specific drink: The “New Way” Dirty Martini. It comes garnished with spherified olive juice and olive brine air, like something that fell out of a time machine from the future.
