Under the founding watch of proprietor Audrey Saunders, this Soho bar, named for a storied, late-19th-century British officers club in Burma, is noted for helping repopularize gin. Although Saunders has decamped from NYC to the West Coast, this still is the bar where countless well-known bartenders (and barflies) cut their teeth, and it’s with good reason Pegu sometimes is called the Harvard of Mixology.
