It may stand for the legendarily scenic California coastal road, but PCH also stands for Pacific Cocktail Haven, a bar that opened in June in the former Cantina space. It’s already notable because Kevin Diedrich is behind it. Having launched many a great bar in SF, he offers drinks that are creative, balanced and ultimately quaffable.
THE DRINK TO DRINK: Diedrich’s inspired drinks show off every ingredient from chrysanthemum to miso, shiso to saffron. The Santorini Summer may be one of the most unique, though subtle and well-integrated, featuring Bombay Sapphire East gin with a house tzatziki-style mix of Bols Natural Yoghurt liqueur, a heavy dose of cucumber and whispers of garlic, salt and olive oil. Balanced by citrus and topped off with tonic, it’s a Mediterranean escape.
KNOW BEFORE YOU GO: You can bring over house-made sausages, curry fries and other bites from next door neighbor, Hogwash, ideally paired with dry, balanced drinks like the Salary Man, showing off a limited-edition junmai daiginjo sake with Dolin blanc vermouth, maraschino liqueur and bitters.
