What isn’t there to love about Las Perlas? The Mexican cantina has only been in downtown L.A. since 2010, but it has established a reputation for having L.A.’s best selection of tequila, mezcal, and craft margaritas. Raul Yrastorza, a bartender himself at one time, is the owner. He and his team personally visit many of the distilleries featured in Las Perlas’ selection. Their goal is to “take agave to the next level” in cocktail culture. As for the name, las perlas means “the pearls,” alluding to the bubbles you’ll see in well-made mezcal when it is shaken. To feature some of these spirits, the bar does a monthly tasting and educational event, but if you can’t make it for that, at least go for the Poblano Escobar, the 400 Rabbits, or any of their other award-winning drinks.
