Bar vets Eben Freeman and Nacho Jimenez are behind the drinks at this cozy den dedicated to agave spirits and Mexican dishes in the former Madam Geneva space. Drinks are garnished with ice pops decorated in the colors of the Mexican flag or presented in adorable donkey wagon vessels. (The El Burro Fantasma serves two.) While there’s plenty of gin and whiskey at the back bar, it’s the tequila, mezcal and sotol you’re here for. Nacho comes by his love of agave, having grown up in Guanajuato, one of the states legally allowed to make tequila. This whimsical spot became an industry must the day it opened. THE DRINK TO DRINK: Agave-themed takes on classic cocktails are the way to go here. The El Diablo Swizzle combines Altos plata tequila, crème de cassis, house-made ginger beer and fresh lime juice in an icy slush. KNOW BEFORE YOU GO: If Nacho is behind the bar and he has a moment, expect to be hugged by your second visit. The lowercase nachos are equally as friendly.
